Very convenient and very easy to make- also this can be lot of fun if you turn around the pancake by making it fly up in the air (your kids will see you in a totally new light!).

 

First of all, let me tell you about the different GF flours you can use. As shown below you can use: chestnut, gram (chick peas), buckwheat, millet, tapioca, plantain, yam, potato, corn, sorgam and also rice, fav bean flours... Or a mixture of them all! Who says GF/CF cooking is limited? Each type of flour has a different taste, texture, colour and elasticity. The ones that work particularly well for pancakes are Chestnuts (very sweet), Buckwheat (that this is fairy bitter), plantain or yam (both of which taste like potato, though the consistency of the pancake is softer and heavier), sorgam (chapatti flour) of course also rice, potato and corn but because these are more commonly seen in commercial GF bread, we prefer to avoid making pancakes with these for a broader variety .

To make pancakes is simple. You do not need any milk at all, just water is fine, 2 eggs for 250gr of flour, some salt (this slightly enhance the taste). Mix eggs, flour and salt. Add enough water to make a sauce consistency paste, mix well until it is smooth (you may need an electric mixer for some flours).

Once this is ready, warm a pan that is lightly greased at intermediate heat, and cook the pancakes for a 1-2 min both sides (at this stage Super Mummy comes into Action, make it fly!). If you have been too good at washing your pan, chances are that the first pancake will stick too much and this will look like a total disaster because you will not be able to turn it around. But you are not a Super Mummy for no reason, keep going, scrape it all off (do not wash with washing liquid or even water, just scrape it off and add a little more oil). The next pancake will turn out all right, I promise
