GF/CF Deserts

Here we will give you a few ideas of deserts:

Cream Smoothie

Cream SmoothieVery simple: in a mixer add various fruits, such as apples, pears, bananas, orange... And also a few vegetables such as carrots, cucumbers, or savoury fruits like avocado.

You can add some soya cream and serve cold as shown here. Alternatively you can make with an ice cream maker a nice sorbet!

Caution: The optimal amount and types of fruits suitable for your child should be identify. Seek the help of a dietician if possible.

Use organic fruits preferably- or products originating from a local farm with known low usage of pesticides.

 

Special occasion cakes:
Cloud Forest Chocolate Cake

Cloud Forest Chocolate Cake180g finely grated cacao
6 large eggs
125g golden caster sugar
50g light muscovado sugar
100g ground almonds
250 unsalted organic butter
25cm lined spring formed cake tin

 

Melt the grated cacao and butter in a bain-marie. For those who are concerned about casein in butter- please review this issue with Marion Bowles SRD, who suggests that certain butter are OK for consumption for ASD kids except those with true milk allergies. Add half the caster sugar, all the muscovado and the almonds- then beat half the caster sugar with the eggs until triple in size. Fold into the cacao mixture, place the tin and bake for 25 min at 160oC. Allow to cool.
